Mmmmmm... rarebit. My mouth waters at the thought. Rarebit is one of those really amazing things created out of a true love for cheese. And, let me tell ya, I love cheese!
A simple cheese sauce is whipped up on the stove top and then toasted bread is smothered in the cheese sauce and popped under the broiler until it's brown and bubbly. It is such a treat. The nice thing about this dish is you can prepare the cheese sauce and keep it in the fridge. I know it sounds crazy, but it works - I promise.
Mummy's Toasted Cheese (Lily's name for Rarebit)
2 -3 Tbsp wine or beer
6-8 ounces strong cheddar, shredded
1/2 to 1 tsp mustard (a good English or French mustard)
1 Tbsp butter
splash of Worcestershire sauce
a few grinds fresh black pepper
4-6 slices bread, depending on size of bread
Heat the broiler. Throw everything into a sauce pan and heat over medium low/low heat until melted, stirring often. Once it's all come together, take it off the heat and prepare the bread. Toast your choice of bread - crusty Italian bread or something you can get in a lot of markets in New England known as Mountain Loaf works really well for this. Or, even better, a nice thick slice of homemade bread! Spoon the cheese mixture over the toasted bread and put under the broiler for 3-6 minutes. Keep an eye on it! When it starts to brown and bubble it's ready.
